Banana Coconut Chocolate Muffins

I like banana pastry recipe because it is very delicate with a soft and sweet-smelling aroma. And when it is combined with chocolate and coconut, then you will probably close your eyes and say “mmmmmm…” Anyway, I have tried this recipe twice and I am going to make it again and again.

Banana Coconut Chocolate Muffins


1 1/2 cups of  flour
3/4 teaspoon baking soda
a pinch of salt
50g of butter, melted
1/2 cup of sugar
1 large egg
3 large ripe bananas
150g of chocolate chips
100g of dried coconut and a bit more to sprinkle on top of the muffins


1. Preheat oven to 220C. In a bowl, mix together flour, baking soda, and salt. Set aside.

2. In another bowl, whisk egg and sugar until well combined. Add melted butter. Mix well. Squish into the bowl bananas and mix. Add chocolate chips and coconut. Mix well.

3. Add dry mixture. Don’t mix much. The more you mix the tougher the muffin so try not to overmix.

4. Put batter into paper cases. Sprinkle tops with some coconut. Bake until golden brown, about 22-30 minutes.
